The Shrimp Broth Experience – Singapore Meets Japan, Bowl by Bowl

At Le Shrimp Noodle Bar, we've created something truly unique: a bowl of noodles that bridges two culinary worlds . Our signature shrimp broth was inspired by a chance discovery at a ramen shop in Hokkaido, Japan, and reimagined through the lens of Cantonese cooking . The result is a rich, aromatic broth with an enticing tangerine-orange hue, developed after hours of simmering fresh prawns, pork bones, and a proprietary blend of Chinese spices including star anise, cinnamon, clove, and white peppercorn .

The secret lies in the wok hei—"the breath of the wok"—a technique where we fire the wok until it's extremely hot, stir-frying cabbage until slightly charred and aromatic before adding our signature broth . This creates layers of flavor that are both complex and deeply satisfying .

Our menu is built around two specialty broths: the celebrated Shrimp Broth and a rich, creamy Chicken Broth . Shrimp lovers can dive into the bestselling Signature Trio Shrimp Ramen, featuring whole prawns, shrimp balls, and shrimp wontons, or enjoy the Big Prawn Noodle with generous, fresh prawns . For those who prefer a different protein, the Braised Scallion Soy Chicken Noodle and Prawn and Chicken Wonton Noodle are also customer favorites . Guests can customize their bowls with a choice of thin or broad noodles, spicy or black-garlic broth, and toppings like green onions, bamboo shoots, and our famous Longjing tea lava egg .

Had a short trip in Chicago and wanted to eat at least once in Chinatown. Glad we choose this restaurant. Love the shrimp broth soup dish (A1). Broth was delicious. If you love shrimp, then must try this. The hainanese chicken is delicious- it’s on of few dishes off the menu. The chicken is moist and the sauces were delicious. My son demolished the braised scallion soy chicken dry noodle. Service is great and helpful. Food came out pretty quickly. Restaurant is clean. Bathroom is clean as well. Can’t wait to come back

We had incredible food and service. We ordered the Singapore Laksa noodle and Hainanese chicken. The food and service were prompt and quality. This is a great stop for lunch while exploring Chinatown and a hidden gem amongst all of the amazing options in the area. I also loved the cozy environment while dining in on a rainy day. beautiful place!!! chinatown restaurants can be pricey as someone here often but it turns out that this restaurant was not expensive at ALL. my meal was under $15 with a drink included (it isn’t in the picture but i had a diet coke). i came with 7 others and the servers we had were so nice, it’s a tiny place but the atmosphere is great and the restaurant was nice. my food was really filling i usually can eat a lot but i didn’t even finish my food so their servings are great. check them out! 🫶🏽🤎
